<p>If there is anything in this world I have authority on, it&#8217;s ramen. I know ramen- it&#8217;s in my bones. I&#8217;ve been eating the instant stuff once a week since I was five (should I be bragging about that?), and my fondest life memories somehow include ramen. Ramen while camping, ramen after a night of drinking. My ex dumped me over a bowl of ramen, true story.</p>
<p>All that to say that I am a ramen wizard. So when I give you a recommendation for where to go for the best ramen, just trust me, please. I showed you where to go for the <a href="http://www.umamimart.com/2008/10/um-secret-best-ramen-in-nyc.html">best ramen in NYC</a>, now here&#8217;s the best ramen in the Bay Area- (dare I say it) maybe even all of California???<span id="fullpost"></p>
<p>Santa started out in a little itty bitty space near downtown San Mateo about ten years ago. My family and I used to drive nearly an hour from the South Bay just to get ramen here, and then wait another painful hour in line for a table. They&#8217;ve always had massive street cred.</p>
<p>They recently moved to a bigger space, still in San Mateo. But there&#8217;s still a line- we went last week at around 7pm and we waited about 20 minutes.</p>
<p>Service is interesting here- you order while you are still in line, so table turnover is faster. It&#8217;s part genius, but part rude- it all feels so rushed. But it is only ramen afterall- slurp and run!</p>
<p>Santa is not only well-known for their ramen, but also for their appetizers. Oddly, they don&#8217;t have gyoza here, but their tastuta age (fried chicken) is worth the wait in line.</p>

<p>My brother&#8217;s extra spicy tonkotsu ramen with corn. Basic ramen comes with green onions, bamboo shoots, bean sprouts and 2 slices of roast pork for $8. You can add on things like corn or an egg for extra $$.</p>

<p>My miso ramen. Look at the pork slices!!! The soup was a bit too sweet. Yoskay got the shoyu (soy sauce) ramen which I think was the best soup out of the three- it was just crisp and savory.</p>

<p>My pops says that the noodles are directly imported from Japan, which is why they are so good. Crinckly egg noodles are my favorite! No <a href="http://www.rameniac.com/ramen_styles/hakata">Hakata</a> style straight noodles for me, thanks.</p>

Started by a New Orleans native (via<a href="http://www.7x7.com/content/neighborhood/cheap-date-yats"> 7&#215;7</a>), it is truly a Louisiana food-lover&#8217;s dream- casual, cheap, and calls on all the flavors of the bayou.</p>
<p>When three good friends swear that Yats makes the best oyster po&#8217;boy they have ever had, you&#8217;ve just gotta try it for yourself. Yats has gotten some great press, but remains super low-key, at least when we went in on Saturday afternoon.<span id="fullpost"></p>
<p>To order, you walk up to the little kitchen window in the back of the bar. Their <a href="http://www.whereyats.com/menu.php">menu</a> is pretty extensive considering they have a relatively small setup- they&#8217;ve got all the traditional cajun dishes like gumbo, jambalaya, red beans and rice, etc. I hear their crawfish Etoufee is awesome too.</p>

Besides the oyster, there&#8217;s also shrimp, catfish, crawfish and sausage. &#8220;The Original&#8221; has french fries and some roast beef gravy. Awesome.</p>
<p>You can order a half sandwich, or a whole, and for the seafood, you can order half and half. Choices, choices. I kept it simple with the whole oyster po&#8217;boy for $12.99. Gave her my name and ordered a beer at the bar. Hell yes!</p>

This, in po&#8217;boy lingo, is considered &#8220;dressed&#8221;.</p>

Reading about the history of the sandwich on <a href="http://en.wikipedia.org/wiki/Po_boy">Wiki</a>, the main distinction between the po&#8217;boy and other sandwiches is the bread- flaky on the outside, fluffy and cottony within.</p>
<p>The bread was indeed crusty and airy, but what impressed me most were the perfectly cooked, jewel-like oysters. They were plump and just barely cooked through so you really got the flavors of the sea. They are dunked in a magical batter conisisting of black pepper and cornmeal. When fried, this combination of bivalve and coating was sublime- light and crispy, yet meaty. It was a well-rounded, well-balanced, superbly-executed sandwich.</p>

I really need to learn more about Cajun food, I do think that it&#8217;s America&#8217;s #1 culinary genre- at least that&#8217;s what I thought when I visited NoLa seven years ago. It&#8217;s just got so much depth and unique plays on traditional european dishes. And of course all the seafood is a plus.</p>
<p>The motto here is <span style="font-weight: bold;">Be Nice or Leave</span>. I suggest everyone abide by this because Yat&#8217;s deserves nothing but respect for this great sandwich. They are celebrating their one-year anniversary this Saturday with a crawfish boil from 12-5pm. Happy Birthday Yat&#8217;s!</p>
